
Cooking School
Share the joys of cuisine and camaraderie at Ocean Reef Club's Cooking School. Once again, this year's schedule offers the most cutting-edge chefs, including many new rising stars, cookbook authors and teachers and Ocean Reef Club's own master chefs. Come meet some fabulous new chefs, and also learn about the ingredients, cooking equipment, cooking tips, new cookbooks and shortcuts that can make cooking quick and easy. Each class brings a new talent sharing his or her recipes, answering your questions, and entertaining us all at the same time. Where else can you spend a few hours with world-renowned chefs watching amazing food being prepared and then tasting it along with a glass of wine? Join us for an extraordinary 16th season of culinary demonstrations, as well as wine and cheese classes, and an interactive hands-on cooking class.
Our demonstration kitchen is equipped with an overhead mirror so that students in every seat can easily view the cooking process. The setting is informal, and questions from the class are encouraged. Most classes last three hours and consist of a brief lecture, cooking and tasting. At each class, you'll sample the featured chef's mouth-watering dishes, sip specially selected and varied wines from the Port O'Call as well as receive printed recipes so you can duplicate the meal at home.
No matter what cuisine you crave, invariably there will be a class to please your palate. We promise you a program that is both educational and enjoyable, one of insight, great food and lots of fun. Carole Kotkin, manager of the Ocean Reef Cooking School, is a cooking teacher, cookbook author, a radio host, and a food and travel writer. She is co-author of MMMMiami—Tempting Tropical Tastes for Home Cooks Everywhere. Carole has been food editor of Wine News magazine for 13 years. Carole is also food editor for The Coral Gables Gazette and www.travellady.com website. She writes a syndicated food column for The Miami Herald that appears in 400 newspapers across the country. She co-hosts "Food & Wine Talk" on southfloridagourmet.com. Her work has appeared in Ladies Home Journal magazine, Miami Metro magazine, American Airways magazine and Gourmet magazine. Miami Metro magazine selected her as “one of 101 women to watch” in 2001 in the food and hospitality profession. Carole compiled the first Zagat guide to South Florida restaurants. She is a regional judge for the James Beard Foundation Awards and on the nominating committee for the Slow Foods Awards. She was co-chairman and founder of the South Florida Chapter of The American Institute of Wine and Food, and is charter member of the Miami chapter of Les Dames d"Escoffier.

All registrations must be made prior to class. Sorry, no refunds, class credit only. Credit may be applied to another class of your choice, provided space is available. Classes are demonstration-style and most last three hours. Printed recipes will be provided and there will be a generous tasting of the dishes produced in class. Teachers reserve the right to alter menus due to seasonal availability of ingredients. Please make note of your class choices, as we do not send out confirmations or reminders.
